چکیده

Allergy to mustard seeds has been reported for years, in many cases as very strong anaphylactic reactions. Recent studies have shown that this allergy is increasing and that mustard allergens can be considered among the most important food allergens, especially in countries where the consumption of mustard seed is high. Clinical studies describing hypersensitivity to mustard are reviewed in this paper, as well as the detailed structural and immunological characterization carried out on the major allergens from yellow (Sinapis alba) and oriental (Brassica juncea) mustard seeds. These allergens, named Sin a 1 and Bra j 1, respectively, belong to the 2S albumin class of seed storage proteins. mustard allergy, 2S albumin, napin-like storage proteins, homology, cysteine pattern, superfamily global fold, structure / allergenicity relationship

Identification and characterization of allergens in spices by mass spectrometry

Background One of the major sources of hidden allergens in food is the use of spices that contain undeclared allergenic ingredients. Sesame and mustard are highly relevant in this context, as both seeds are frequently used in a variety of spices and can elicit severe allergenic reactions. Major allergens of mustard and sesame belong to the 2S-albumin family of seed storage proteins. 2S-albumins...

Is the Cross-Reactivity of Sin a 1, 2S Albumin from Mustard Seeds, Exclusively Restricted to Brassicaceae Members?

Food allergy is an important health problem that is gradually growing worldwide. The most prevalent food allergens are those of vegetal origin, affecting approximately 2-4% of the European adult population and 8% of childhood. 2S albumins have been described as relevant food allergens and their availability as purified molecules could constitute important clinical diagnostic advantage for food ...

The effect of thermal processing on the allergenic activity of peanuts

Background Peanut allergy is considered one of the most prominent food allergies, which often results in severe reactions and can be fatal. It can be attributed to one or more of the 12 recognised peanut allergens, the main peanut allergens being Ara h 1, Ara h 2/6 and Ara h 3. Ara h 2/6 are 2S albumins, sensitisation to which is associated with the most severe allergic reactions. They are used...

2S Albumin Storage Proteins: What Makes them Food Allergens?

2S albumin storage proteins are becoming of increasing interest in nutritional and clinical studies as they have been reported as major food allergens in seeds of many mono- and di-cotyledonous plants. This review describes the main biochemical, structural and functional properties of these proteins thought to play a role in determining their potential allergenicity. 2S albumins are considered ...

Plant food allergy – is it time to see the seeds?

Allergic reactions to fruits and vegetables are frequently observed, however skin prick tests and serological analyses may not always confirm allergy. Recent advances have identified the seeds as potential allergen sources. Seeds are generally rich in storage proteins like 7S/11S globulins and 2S albumins, which are allergens known to be linked to severe reactions. For a number of plant food, s...
